Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix dry ingredients: In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- Cream butter and sugar: In a large bowl, beat butter and brown sugar until light and fluffy.
- Add wet ingredients: Add the egg and vanilla extract to the butter mixture and beat until combined.
- Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, mixing until smooth.
- Tint batter: Divide the batter into two bowls and tint one with red food coloring and the other with blue.
- Bake: Drop rounded tablespoons of batter onto the prepared sheets, bake for 10–12 minutes, then let them cool.
- Make filling: Beat butter until smooth, add powdered sugar, marshmallow creme, and vanilla extract, mix until well combined.
- Assemble: Spread or pipe the filling onto one cake, top with another to create a sandwich. Repeat with remaining cakes.
- Optional: Roll the sides in red, white, and blue sprinkles for a festive touch.
