Description

This Air Fryer Lava Cake recipe delivers rich, molten chocolate goodness with a delightfully tender cake exterior. Perfectly portioned for two, it uses an air fryer to achieve a gooey center and a slightly crisp edge in just 15 minutes. Ideal for a quick and indulgent dessert that feels gourmet but comes together effortlessly.

Ingredients

Scale

Chocolate Mixture

  • 1/2 cup (115g) unsalted butter, cut into pieces
  • 4 oz (115g) semi-sweet or bittersweet chocolate, chopped

Batter

  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • Pinch of salt

For Ramekins

  • Butter (for greasing ramekins)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Prepare Chocolate Mixture: In a microwave-safe bowl or over a double boiler, melt the unsalted butter and chopped chocolate together until completely smooth. Stir well to combine and set aside to cool slightly.
  2. Mix Batter: In a mixing bowl, whisk together granulated sugar, eggs, egg yolks, and vanilla extract until the mixture is light and slightly thickened. This helps create a tender texture in the cake.
  3. Combine Ingredients: Gradually fold the melted chocolate mixture into the egg mixture. Then sift in the all-purpose flour and pinch of salt, gently folding until just combined. Avoid overmixing to keep the batter light.
  4. Prepare Ramekins: Grease two small ramekins thoroughly with butter to prevent sticking. Pour the batter evenly into each ramekin, filling them about 3/4 full.
  5. Air Fry the Cakes: Preheat your air fryer to 370°F (188°C). Place the ramekins inside the air fryer basket and cook for 9-11 minutes. Look for the edges to be set with a slight jiggle in the center, this ensures a molten lava core.
  6. Serve: Carefully remove the ramekins from the air fryer and let them sit for 1-2 minutes before inverting onto plates. Dust with powdered sugar if desired and serve immediately for the best molten texture.

Notes

  • Use room temperature eggs for better batter incorporation.
  • Do not overcook to maintain the lava center; start checking at 9 minutes.
  • For best results, preheat the air fryer before adding cakes.
  • Use a silicone spatula for folding ingredients gently.
  • Serve with vanilla ice cream or fresh berries for extra indulgence.
