Tortilla Chips Layer:
- 1 bag (10 ounces) tortilla chips
Cheese Layer:
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
Bean Mixture:
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 cup corn kernels, fresh or frozen
- 1 small red onion, finely diced
- 1 jalapeño, sliced (optional)
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt to taste
Toppings:
- 1/2 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup fresh cilantro, chopped
- Sour cream, guacamole, and salsa for serving
Instructions
- Preheat the Air Fryer: Preheat the air fryer to 350°F (175°C).
- Prepare the Bean Mixture: In a medium bowl, mix black beans, corn, onion, chili powder, cumin, paprika, and salt.
- Layer the Ingredients: Line the air fryer basket, layer tortilla chips, cheeses, and bean mixture. Repeat layers, finishing with cheese on top.
- Air Fry: Air fry for 5–7 minutes until cheese is melted.
- Top and Serve: Remove nachos, top with tomatoes, olives, cilantro, and jalapeños. Serve with sour cream, guacamole, and salsa.
Notes
- For loaded nachos, add cooked ground beef, shredded chicken, or chorizo between the layers.
