  • 1 heaping cup small broccoli florets
  • 1 heaping cup small cauliflower florets

Instructions

  1. Preheat the air fryer: Set your air fryer to 375°F (190°C) to ensure it’s hot and ready for cooking the vegetables evenly.
  2. Prepare the vegetables: Chop the zucchini or yellow squash into ½-inch half-moons, dice the red bell pepper, quarter the cremini mushrooms, chop the red onion into 1-inch pieces, thinly slice the carrot, and separate broccoli and cauliflower into small florets.
  3. Season the veggies: Place all the prepared vegetables into a large bowl. Drizzle with 3 tablespoons of extra-virgin olive oil then sprinkle 1 teaspoon Italian seasoning, ½ teaspoon garlic powder, ½ teaspoon sea salt, and freshly ground black pepper. Toss everything thoroughly to coat evenly.
  4. Cook in batches: Lay the seasoned vegetables in a single layer inside the air fryer basket. Avoid overcrowding to ensure the vegetables crisp up nicely and cook evenly. If needed, cook in multiple batches.
  5. Air fry the vegetables: Cook at 375°F for 10 to 15 minutes. Halfway through cooking, shake the basket to rearrange the vegetables for even browning. The vegetables should be tender and lightly browned when done.
