Instructions
- Cook the sausage: Heat olive oil in a large soup pot over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through.
- Sauté aromatics: Add the diced onion and minced garlic to the pot and sauté until softened, about 3 minutes.
- Simmer the noodles: Pour in the chicken broth and water, then stir in the broken lasagna noodles. Bring the mixture to a boil, then reduce heat and simmer for 10–12 minutes, or until the noodles are tender.
- Add creamy ingredients and season: Stir in the heavy cream, Alfredo sauce, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Simmer for another 2–3 minutes to heat through.
- Incorporate spinach and cheese: Add the baby spinach and cook just until wilted. Turn off the heat and stir in the shredded mozzarella and grated Parmesan cheese.
- Serve: Ladle the soup into bowls and garnish with fresh chopped parsley before serving.
