Description

These Apple Cinnamon Oatmeal Raisin Cookies are a delightful treat that perfectly balances the flavors of sweet apples, warm cinnamon, and chewy raisins. Packed with wholesome oats, these cookies are a comforting and satisfying dessert or snack option.

Ingredients

Scale

Cookie Dough:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon

Mix-Ins:

  • 3 cups old-fashioned oats
  • 1 cup raisins
  • 1 cup peeled and finely diced apple (about 1 medium apple)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs and vanilla until smooth.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Stir in mix-ins: Fold in the oats, raisins, diced apple, and nuts if using.
  6. Bake: Drop heaping tablespoons of dough onto the prepared baking sheets and bake for 10–12 minutes until golden.
  7. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use firm apples like Honeycrisp or Granny Smith for best texture.
  • Soak the raisins in warm water for 10 minutes beforehand to make them extra plump.
  • Store cookies in an airtight container at room temperature for up to 5 days.
