Ingredients
Scale
Guacamole Mixture
- 2 avocados, pitted, peeled, and mashed
- 6 oz. cream cheese, softened
- Juice of 1 lime
- 1 garlic clove, minced
- 1/4 red onion, minced
- 1 small jalapeno, seeded if preferred less heat, chopped
- 2 Tbsp. freshly chopped cilantro
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Bacon Coating
- 12 slices bacon, cooked and crumbled
Instructions
- Prepare the guacamole mixture: In a large bowl, combine the mashed avocados, softened cream cheese, lime juice, minced garlic, minced red onion, chopped jalapeno, chopped cilantro, cumin, chili powder, kosher salt, and freshly ground black pepper. Stir the mixture until mostly smooth, leaving some small chunks for texture. Cover and refrigerate for about 30 minutes to allow the flavors to meld and the mixture to firm up slightly.
- Form the guac bombs: Place the crumbled bacon on a large plate. Using a small cookie scoop or spoon, scoop portions of the chilled guacamole mixture and place them on the plate with the bacon. Roll each scoop in the bacon crumbs to coat thoroughly, then shape into bite-sized balls. Continue until all the guacamole and bacon are used.
- Chill and serve: Store the bacon guac bombs in the refrigerator until ready to serve. They can be enjoyed cold or at room temperature as a flavorful appetizer or snack.
Notes
- For less heat, remove jalapeno seeds before chopping.
- Use thick-cut bacon for a more robust crunch and flavor.
- These guac bombs are best served within 24 hours for optimal freshness.
- Refrigerate leftovers in an airtight container to maintain texture and flavor.
- Optionally, garnish with extra cilantro or a squeeze of lime when serving.
