Ingredients
Scale
Meat and Seasoning
- 1 pound lean ground beef
- 1 small white onion, chopped
- 1 packet taco seasoning
Beans and Cream Mixture
- 1 can (15 ounces) refried beans
- 1/2 cup water
- 1 can (10 ounces) cream of mushroom soup
- 1/2 cup sour cream
Main Layers
- 6 taco-size flour tortillas
- 2 cups shredded Mexican blend cheese
Toppings (optional)
- Sour cream
- Chives
- Shredded lettuce
- Jalapeños
- Diced tomatoes
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with non-stick spray and set it aside to get ready for layering.
- Cook the Beef Mixture: In a large skillet over medium heat, crumble and brown the ground beef along with the chopped onion until the beef is no longer pink. Drain any excess grease. Then, add the taco seasoning, refried beans, and water to the skillet. Stir well to combine and let the mixture heat through for a few minutes.
- Mix the Creamy Sauce: In a separate bowl, whisk together the cream of mushroom soup and sour cream until smooth to create a creamy sauce which will add moisture and richness to the casserole.
- Layer Tortillas and Sauce: Place 3 flour tortillas at the bottom of the prepared baking dish. Evenly spread half of the creamy soup and sour cream mixture over the tortillas.
- Add Beef and Cheese Layer: Spread half of the ground beef mixture over the creamy layer, then sprinkle one cup of shredded Mexican blend cheese on top.
- Repeat Layers: Repeat the layering process with the remaining tortillas, soup mixture, beef mixture, and top off with the remaining shredded cheese.
- Bake the Casserole: Bake the casserole uncovered in the preheated oven for 20 minutes or until the cheese is fully melted and bubbly.
- Serve with Toppings: Remove from the oven and serve warm, garnished with your choice of sour cream, chives, shredded lettuce, jalapeños, and diced tomatoes for added freshness and flavor.
Notes
- You can substitute cream of mushroom soup with cream of chicken soup if preferred.
- For a spicier casserole, add sliced jalapeños into the beef mixture or on top before baking.
- If you want to make it lighter, use reduced-fat sour cream and lean ground turkey instead of beef.
- Ensure to drain excess grease from the cooked beef to keep the casserole from being too greasy.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
