- 1 cup ricotta cheese
- 1/2 cup breadcrumbs

- Salt and pepper to taste
For the Spinach Alfredo Sauce:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven: to 400°F (200°C) and line a baking sheet with parchment paper.
- Make the Meatballs: In a large bowl, combine ground chicken, ricotta, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix until well combined. Shape into meatballs and place on the prepared baking sheet.
- Bake the Meatballs: for about 20-25 minutes until cooked through and lightly browned.
- Prepare the Sauce: In a saucepan, melt butter and sauté garlic. Add heavy cream and Parmesan, stirring until smooth. Add spinach and cook until wilted. Season with salt and pepper.
