Cauliflower Bites:

- 2/3 cup water
- 1 cup panko breadcrumbs
- cooking spray or oil for baking
Bang Bang Sauce:
- 1/3 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon honey or maple syrup
- 1 teaspoon rice vinegar
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the batter: In a large bowl, whisk together the flour, cornstarch, salt, garlic powder, black pepper, and water to form a smooth batter.
- Coat the cauliflower: Dip each cauliflower floret into the batter, shake off excess, then coat in panko breadcrumbs.
- Bake: Arrange the coated florets on the baking sheet, spray lightly with oil, and bake for 25 to 30 minutes until golden and crispy.
- Make the sauce: Whisk together all sauce ingredients until smooth.
- Finish and serve: Drizzle the sauce over the baked cauliflower or toss to coat. Serve garnished with green onions or sesame seeds.
Notes
- For a spicier version, add extra sriracha to the sauce.
- Best enjoyed fresh out of the oven for maximum crispness.
