Ingredients
Scale
Crumbles
- 1 package Carmelita Bar Mix™
- ½ cup butter, melted
Caramel Sauce
- Remaining packet of Carmelita Bar Mix™ (packet 2)
- ½ cup heavy cream
- ¼ teaspoon sea salt
Whipped Cream
- 1½ cups heavy cream
- ¼ cup powdered sugar
- 1 teaspoon pure vanilla extract
Other
- 4 just ripe bananas, sliced
- Grated dark chocolate bar or 1 tablespoon cocoa powder (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a large rimmed baking sheet with parchment paper to prepare for baking the crumbles.
- Prepare Crumbles: In a large bowl, mix the Carmelita Bar Mix packet 1 with melted butter until small crumbles form. Spread the mixture evenly on the prepared baking sheet, using your hands to form some larger pieces for texture. Bake for 10 minutes, then carefully stir the crumbles to prevent them from breaking too much. Continue baking for another 5 minutes. Once done, remove from the oven and let the crumbles cool completely.
- Make Caramel Sauce: In a large microwave-safe bowl, combine Carmelita Bar Mix packet 2, ½ cup heavy cream, and sea salt. Microwave on HIGH for 1 minute, stir well, then microwave for an additional minute. Allow the caramel sauce to cool before assembling.
- Prepare Whipped Cream: In a separate large bowl, combine the remaining 1½ cups heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat the mixture until stiff peaks form, creating a light and fluffy whipped cream.
- Assemble Parfaits: Begin layering the parfait glasses by dividing half of the cooled caramel crumbles evenly among them. Top the crumbles with a generous spoonful of caramel sauce, then add a layer of sliced ripe bananas. Follow with the remaining crumble mixture. Finally, cover each parfait with the freshly whipped cream topping.
- Chill: Refrigerate the assembled parfaits for 30 minutes to let the flavors meld and the parfaits chill for a refreshing treat.
- Garnish and Serve: Just before serving, garnish each parfait with grated dark chocolate or a sprinkle of cocoa powder for added flavor and presentation.
Notes
- For best results, use just ripe bananas with some firmness to avoid sogginess in the parfaits.
- Ensure the caramel sauce is completely cooled before assembling to prevent melting the whipped cream.
- The Carmelita Bar Mix packets are used separately for crumbles and caramel sauce, so be sure to divide them as indicated.
- You can make the crumbles and caramel sauce ahead of time and store them separately to save assembly time.
- If you prefer a less sweet dessert, reduce the powdered sugar in the whipped cream slightly.
- Substitute heavy cream with coconut cream for a dairy-free twist, though texture and taste will vary.
