These Basic Cauliflower Fritters are a delicious, easy-to-make appetizer or side dish featuring tender mashed cauliflower mixed with Parmesan, eggs, and green onions, pan-fried to golden crisp perfection. Perfect for a light snack or a healthy accompaniment to any meal.

- 1 medium head cauliflower, cut into florets (about 4 cups)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 green onions, finely chopped
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2–3 tablespoons olive oil or vegetable oil for frying
Instructions
- Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5–6 minutes until tender. Drain well and mash with a fork or potato masher until broken down but still a bit chunky.
- Make the Batter: In a large bowl, mix the mashed cauliflower with eggs, flour, Parmesan, green onions, garlic, salt, and pepper until well combined.
- Cook the Fritters: Heat oil in a large skillet over medium heat. Scoop about 2 tablespoons of the mixture per fritter into the skillet and flatten gently with the back of a spoon. Cook for 3–4 minutes per side, or until golden brown and crispy.
- Drain and Serve: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm with sour cream, yogurt, or your favorite dip.
Notes
- For a gluten-free version, use a 1:1 gluten-free flour blend instead of all-purpose flour.
- To make a lighter version, bake the fritters at 400°F (200°C) for 20–25 minutes, flipping halfway through.
