Instructions
- Prepare the skillet: Heat 2 tablespoons of olive oil in a large skillet over medium heat to get it ready for cooking the sweet potatoes.
- Cook sweet potatoes: Add the chopped sweet potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally, until they become tender and caramelized, infusing them with rich flavor.
- Sauté onions and corn: Toss in the diced red onion and 1 cup of corn. Continue to sauté for another 5-7 minutes until the onion is translucent and everything is softened, blending the flavors nicely.
- Add chicken and BBQ sauce: Incorporate the cooked chicken and BBQ sauce into the skillet, stirring well to combine. Heat through for 3-4 minutes until the mixture is nicely warmed and well-coated.
