Description

A delicious and easy one-pan dinner featuring tender sweet potatoes, BBQ chicken, and melty cheddar cheese cooked together in a skillet for a flavorful, satisfying meal.

Ingredients

Scale

Main Ingredients

  • 2 cups Sweet Potatoes, cut evenly for consistent cooking
  • 2 cups Cooked Chicken (rotisserie chicken is a quick substitute)
  • 1/2 cup BBQ Sauce (your favorite brand)
  • 1 medium Red Onion (can substitute with yellow onion)
  • 1 cup Corn (fresh, canned, or frozen)
  • 1 cup Cheddar Cheese (or dairy-free cheese for lactose-free option)
  • 2 tablespoons Olive Oil (or avocado oil)
  • Salt & Black Pepper to taste
  • 1 teaspoon Smoked Paprika (regular paprika can be used if necessary)
  • 2 tablespoons Green Onions (optional garnish, can substitute with chives)

Instructions

  1. Prepare the skillet: Heat 2 tablespoons of olive oil in a large skillet over medium heat to get it ready for cooking the sweet potatoes.
  2. Cook sweet potatoes: Add the chopped sweet potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally, until they become tender and caramelized, infusing them with rich flavor.
  3. Sauté onions and corn: Toss in the diced red onion and 1 cup of corn. Continue to sauté for another 5-7 minutes until the onion is translucent and everything is softened, blending the flavors nicely.
  4. Add chicken and BBQ sauce: Incorporate the cooked chicken and BBQ sauce into the skillet, stirring well to combine. Heat through for 3-4 minutes until the mixture is nicely warmed and well-coated.
  5. Finish with cheese: Sprinkle cheddar cheese evenly over the top and cover the skillet. Let it sit for 2-3 minutes until the cheese melts beautifully. Serve warm directly from the skillet, garnished with green onions if desired.

Notes

  • For a quicker version, use pre-cooked rotisserie chicken.
  • You can substitute red onion with yellow onion if preferred.
  • Frozen or canned corn works just as well as fresh corn.
  • To make this recipe lactose-free, use dairy-free cheese instead of cheddar.
  • Adjust seasoning with salt, black pepper, and smoked paprika to your taste.
  • Garnish with green onions or chives to add a fresh pop of flavor.
