Ingredients
Scale
Chicken and Seasoning
- 1.5 lbs Boneless, skinless chicken breasts or thighs
- 1 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1/2 tsp Garlic powder
- 1/2 tsp Smoked paprika
Bang Bang Sauce
- 1/2 cup Mayonnaise (or use 1/4 cup mayo + 1/4 cup Greek yogurt)
- 2 tbsp Sriracha
- 1 tbsp Honey or sugar
- 1 tbsp Rice vinegar or lime juice
Others
- 8-10 pieces Skewers
Instructions
- Cut the Chicken: Cut the chicken into 1 to 1.5-inch chunks to ensure they cook evenly and absorb the flavors well.
- Season the Chicken: In a bowl, mix the chicken with olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss until every piece is coated in the spice blend.
- Skewer the Chicken: Thread the seasoned chicken chunks onto the skewers, leaving a little space between each piece for even cooking.
- Preheat the Grill: Heat your grill or grilling pan to medium-high heat to ensure a good sear and proper cooking.
- Grill the Skewers: Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is beautifully charred and cooked through.
- Make the Bang Bang Sauce: In a separate bowl, whisk together mayonnaise, sriracha, honey (or sugar), and rice vinegar (or lime juice) until smooth and creamy.
- Serve: Place the grilled chicken skewers on a serving platter and drizzle with the Bang Bang Sauce or serve it alongside for dipping.
Notes
- Use boneless, skinless chicken thighs for juicier skewers or chicken breasts for a leaner option.
- Soak wooden skewers in water for 20-30 minutes before grilling to prevent burning.
- Adjust sriracha amount in the sauce according to your spice preference.
- Can be served with rice, salad, or grilled vegetables for a complete meal.
- Leftover bang bang sauce can be stored in an airtight container in the refrigerator for up to 3 days.
