Chicken Tinga:
- 1 tablespoon olive oil
- 1 small onion finely chopped
- 2 garlic cloves minced
- 2 chipotle peppers in adobo sauce chopped
- 1 tablespoon adobo sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 (15 oz) can fire-roasted diced tomatoes
- 1/2 teaspoon salt
- 3 cups shredded cooked chicken (rotisserie or poached)
Tacos:
- 8 small corn tortillas
- toppings such as diced onion, chopped cilantro, crumbled queso fresco, avocado slices, and lime wedges
Instructions
- Prepare the Chicken Tinga: Heat olive oil in a skillet. Sauté onion until softened. Add garlic, chipotle peppers, adobo sauce, oregano, cumin, and smoked paprika; cook. Add tomatoes and salt, simmer. Blend mixture until smooth. Return to skillet, add chicken, simmer.
- Assemble the Tacos: Warm tortillas. Spoon chicken tinga onto each tortilla. Top with desired garnishes. Serve with lime wedges.
