Description

These Best Chicken Tinga Tacos are a flavor-packed Mexican favorite. Tender, shredded chicken in a smoky, spicy tomato sauce, wrapped in warm corn tortillas and topped with your favorite garnishes.

Chicken Tinga:

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 chipotle peppers in adobo sauce chopped
  • 1 tablespoon adobo sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 (15 oz) can fire-roasted diced tomatoes
  • 1/2 teaspoon salt
  • 3 cups shredded cooked chicken (rotisserie or poached)

Tacos:

  • 8 small corn tortillas
  • toppings such as diced onion, chopped cilantro, crumbled queso fresco, avocado slices, and lime wedges

Instructions

  1. Prepare the Chicken Tinga: Heat olive oil in a skillet. Sauté onion until softened. Add garlic, chipotle peppers, adobo sauce, oregano, cumin, and smoked paprika; cook. Add tomatoes and salt, simmer. Blend mixture until smooth. Return to skillet, add chicken, simmer.
  2. Assemble the Tacos: Warm tortillas. Spoon chicken tinga onto each tortilla. Top with desired garnishes. Serve with lime wedges.
