Blueberry Thyme Sauce

  • 1 cup fresh blueberries
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • 1 tbsp fresh thyme leaves (plus extra for garnish)
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • 1 tbsp butter


Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper to ensure the chicken is well seasoned.
  2. Sear: Heat olive oil in a skillet over medium-high heat. Place chicken breasts in the hot pan and sear for 4–5 minutes on each side until they develop a golden brown crust and reach an internal temperature of 165°F (74°C). Remove chicken from the skillet and set aside.
  3. Make the blueberry thyme sauce: Using the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add fresh blueberries, honey, balsamic vinegar, fresh thyme leaves, and chicken broth. Stir to combine and let the sauce simmer for 5–6 minutes until the blueberries soften and the sauce thickens slightly.
  4. Finish: Stir in the butter to give the sauce a silky texture. Return the cooked chicken breasts to the skillet and spoon the sauce over the top. Allow the chicken to cook in the sauce for an additional 1–2 minutes so the flavors meld together.
