  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 2 tablespoons all-purpose flour

For the topping:

  • 2 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Preheat the oven: to 325°F (163°C).
  2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. Make the filling: Beat cream cheese and sugar, add eggs one at a time, then mix in vanilla, sour cream, and flour. Pour over crust.
  4. Bake: for 50–60 minutes until slightly jiggly. Cool in the oven, then refrigerate.
  5. Prepare the topping: Simmer blueberries, sugar, and lemon juice. Add cornstarch slurry, cook until thickened, then cool and spread over cheesecake.
