Instructions
- Prepare Cream Cheese Filling: In a small bowl, mix the softened cream cheese and granulated sugar until smooth and well combined.
- Flatten Bread Slices: Using a rolling pin, gently flatten each slice of bread to make it easier to roll and create a thinner base.
- Assemble Roll Ups: Spread about 1 tablespoon of the cream cheese mixture evenly onto each flattened slice. Place a few blueberries along one edge of the bread, then carefully roll up the slice tightly to enclose the filling.
- Mix Egg Batter: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth and well blended.
- Heat the Skillet: Place 2 tablespoons of butter into a skillet and heat over medium heat until melted and foaming.
- Cook Roll Ups: Dip each roll up into the egg mixture, ensuring it’s fully coated. Place them seam-side down in the hot skillet. Cook for 2–3 minutes on each side, turning gently, until all sides are golden brown and cooked through.
