Description

Delight in these Blueberry French Toast Roll Ups, a fun and delicious twist on traditional French toast. Soft bread slices are filled with a creamy sweetened cream cheese and fresh blueberries, rolled tightly, then dipped in a cinnamon-vanilla egg mixture and pan-fried to a golden perfection. Finished with a dusting of powdered sugar and served warm with maple syrup, these roll ups are perfect for a kid-friendly breakfast or a special brunch treat.

Ingredients

Scale

For the Roll Ups

  • 8 slices soft white or brioche bread, crusts removed
  • 4 oz cream cheese, softened
  • 1/2 cup fresh or frozen blueberries
  • 2 tablespoons granulated sugar

For the Egg Mixture

  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

For Cooking and Serving

  • 2 tablespoons butter (for frying)
  • Powdered sugar (for dusting)
  • Maple syrup (for serving)

Instructions

  1. Prepare Cream Cheese Filling: In a small bowl, mix the softened cream cheese and granulated sugar until smooth and well combined.
  2. Flatten Bread Slices: Using a rolling pin, gently flatten each slice of bread to make it easier to roll and create a thinner base.
  3. Assemble Roll Ups: Spread about 1 tablespoon of the cream cheese mixture evenly onto each flattened slice. Place a few blueberries along one edge of the bread, then carefully roll up the slice tightly to enclose the filling.
  4. Mix Egg Batter: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth and well blended.
  5. Heat the Skillet: Place 2 tablespoons of butter into a skillet and heat over medium heat until melted and foaming.
  6. Cook Roll Ups: Dip each roll up into the egg mixture, ensuring it’s fully coated. Place them seam-side down in the hot skillet. Cook for 2–3 minutes on each side, turning gently, until all sides are golden brown and cooked through.
  7. Rest and Serve: Remove the cooked roll ups from the skillet and let them rest for 1 minute. Dust with powdered sugar and serve warm with maple syrup on the side.

Notes

  • Use room-temperature cream cheese to make spreading easier and smoother.
  • If using frozen blueberries, make sure to thaw completely and pat dry to avoid excess moisture.
  • For extra texture and flavor, roll the finished roll ups in cinnamon sugar immediately after frying.
