Yogurt Base
- 1 cup Greek yogurt (full-fat for creaminess)
- 1/2 tsp vanilla extract
- Extra honey or maple syrup to taste (optional)
Blueberry Compote
- 1/2 cup blueberries (fresh or frozen)
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch (optional, for thickening)
- 1 tbsp water (to mix with cornstarch, if using)
Instructions
- Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and break down. If a thicker compote is desired, dissolve cornstarch in 1 tablespoon water and stir into the simmering mixture. Allow the compote to cool completely.
- Prepare the Yogurt Base: In a mixing bowl, stir together Greek yogurt and vanilla extract until smooth and creamy. Taste and add extra honey or maple syrup if a sweeter bite is preferred.
- Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full to leave room for the compote swirl.
- Add the Blueberry Swirl: Place a small spoonful of cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt creating a marbled, artistic effect.
- Freeze: Transfer the molds to the freezer and freeze for at least 3 hours or until the bites are solid and fully set.
- Unmold and Serve: Once frozen solid, pop the yogurt bites out of their molds and store in an airtight container in the freezer. Let each bite sit at room temperature for 2–3 minutes before eating to enjoy the best texture.
