Instructions
- Prepare the Cake. Follow the instructions on the vanilla cake mix box to prepare the batter, then bake as directed. Allow the cake to cool completely before cutting it into bite-sized cubes for layering.
- Make the Pastry Cream. In a medium saucepan, whisk together the milk, granulated sugar, cornstarch, and salt. Heat over medium heat, stirring constantly. In a separate bowl, lightly beat the egg yolks. Gradually temper the egg yolks by slowly adding a small amount of the hot milk mixture while whisking vigorously. Return the tempered yolks to the saucepan and cook, stirring continuously until the mixture thickens and comes to a gentle boil. Remove from heat and stir in the unsalted butter and vanilla extract until fully incorporated. Transfer to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and refrigerate until chilled.
- Prepare the Chocolate Ganache. In a small saucepan, heat the 1/2 cup heavy cream until it just begins to simmer. Pour the hot cream over the dark chocolate chips in a heatproof bowl. Let it sit for a minute, then stir until smooth and glossy. Allow to cool slightly before layering.
- Whip the Cream. In a chilled mixing bowl, beat the 1 cup heavy cream with the powdered sugar until soft peaks form. Set aside.
- Assemble the Trifle. In a large trifle bowl or individual serving glasses, start by layering the vanilla cake cubes. Spoon a layer of chilled pastry cream over the cake, followed by a layer of whipped cream. Drizzle some chocolate ganache over the whipped cream. Repeat the layering until all components are used, finishing with a topping of whipped cream and a scattering of fresh berries for garnish.
