Instructions

  1. Preheat Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, black pepper, and chili powder until fully combined and smooth.
  3. Cook Eggs and Sausage: Heat a skillet over medium heat and scramble the egg mixture until just set. Stir in the cooked breakfast sausage or bacon crumbles and chopped green onions. Remove from heat.
  4. Warm Tortillas: Slightly warm the tortillas to make them pliable and easier to roll without tearing.
  5. Assemble Taquitos: Spoon a small amount of the egg and meat mixture onto each tortilla, sprinkle evenly with shredded cheese, then roll tightly. Place each rolled taquito seam-side down on the prepared baking sheet to keep them closed.
