Instructions
- Preheat Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, black pepper, and chili powder until fully combined and smooth.
- Cook Eggs and Sausage: Heat a skillet over medium heat and scramble the egg mixture until just set. Stir in the cooked breakfast sausage or bacon crumbles and chopped green onions. Remove from heat.
- Warm Tortillas: Slightly warm the tortillas to make them pliable and easier to roll without tearing.
- Assemble Taquitos: Spoon a small amount of the egg and meat mixture onto each tortilla, sprinkle evenly with shredded cheese, then roll tightly. Place each rolled taquito seam-side down on the prepared baking sheet to keep them closed.
- Oil and Bake: Lightly brush the taquitos with olive oil or spray with cooking spray for crispiness. Bake in the preheated oven for 12–15 minutes, turning once halfway through, until golden and crispy.
- Serve: Remove from the oven and serve hot with salsa and sour cream on the side.

- These taquitos can be assembled ahead of time and frozen for convenience. To reheat, bake directly from frozen at 375°F for 15–20 minutes until heated through and crispy.
- For a vegetarian version, omit the meat and add sautéed peppers, mushrooms, or spinach as a flavorful filling alternative.
