Ingredients
Scale
For the rolls:
- 1/2 cup warm milk (110°F/45°C)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 3 tablespoons granulated sugar
- 3 1/2 cups all-purpose flour
- 1 teaspoon salt
- 4 large eggs (room temperature)
- 1/2 cup unsalted butter, softened and cut into cubes
- 1 egg, beaten with 1 tablespoon milk (for egg wash)
Instructions
- Prepare the yeast: In a small bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let sit for 5 to 10 minutes until foamy.
- Mix the dough: In a stand mixer fitted with a dough hook, combine flour, remaining sugar, and salt. Add eggs and yeast mixture. Knead on medium speed until dough forms, about 3 minutes.
- Add butter: Gradually add softened butter cubes, kneading until fully incorporated and dough is smooth, about 8 to 10 minutes.
- Rise and shape: Let dough rise until doubled, then divide into 12 pieces. Shape into balls and place in a baking dish.
- Final rise and bake: Let rolls rise again, then brush with egg wash. Bake until golden and fluffy, about 18 to 20 minutes.
