Description

These Brioche Dinner Rolls are fluffy, buttery, and perfect for any occasion. With a touch of sweetness, these homemade rolls will elevate any meal with their rich flavor and soft texture.

Ingredients

Scale

For the rolls:

  • 1/2 cup warm milk (110°F/45°C)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 3 tablespoons granulated sugar
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 4 large eggs (room temperature)
  • 1/2 cup unsalted butter, softened and cut into cubes
  • 1 egg, beaten with 1 tablespoon milk (for egg wash)

Instructions

  1. Prepare the yeast: In a small bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let sit for 5 to 10 minutes until foamy.
  2. Mix the dough: In a stand mixer fitted with a dough hook, combine flour, remaining sugar, and salt. Add eggs and yeast mixture. Knead on medium speed until dough forms, about 3 minutes.
  3. Add butter: Gradually add softened butter cubes, kneading until fully incorporated and dough is smooth, about 8 to 10 minutes.
  4. Rise and shape: Let dough rise until doubled, then divide into 12 pieces. Shape into balls and place in a baking dish.
  5. Final rise and bake: Let rolls rise again, then brush with egg wash. Bake until golden and fluffy, about 18 to 20 minutes.

Notes

  • For a sweeter version, add an extra tablespoon of sugar.
  • Rolls can be made ahead and refrigerated overnight before baking.
  • These rolls freeze well; reheat in the oven before serving.
