Description

Broccoli Melt Ingredients:

  • 4 cups fresh broccoli florets
  • 2 tablespoons olive oil
  • 1 small onion finely sliced
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 4 slices sourdough bread or ciabatta
  • 2 tablespoons softened butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Blanch the Broccoli: Bring a pot of salted water to a boil and blanch broccoli florets for 2–3 minutes until just tender but still bright green. Drain well and roughly chop.
  2. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic, red pepper flakes, and chopped broccoli. Season with salt and black pepper and cook for 3–4 minutes.
  3. Assemble the Sandwiches: Butter one side of each bread slice. Place two slices, butter-side down, in a skillet. Top each with half of the broccoli mixture and sprinkle evenly with cheddar, mozzarella, and Parmesan. Place the remaining bread slices on top, butter-side up.
  4. Cook the Sandwiches: Cook over medium heat for 3–4 minutes per side until the bread is golden and the cheese is melted. Slice and serve hot.

Notes

  • For extra flavor, add a slice of tomato or a smear of Dijon mustard inside the melt.
  • This also works well as an open-faced sandwich under the broiler.
