- 2 cups cooked shredded chicken
- 1/3 cup buffalo hot sauce
- 2 tablespoons ranch or blue cheese dressing
For the Quesadillas:
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon butter or olive oil (for cooking)
- chopped green onions or cilantro for garnish (optional)
Instructions
- Prepare the Buffalo Chicken: In a bowl, mix shredded chicken with buffalo sauce and ranch or blue cheese dressing until well coated.
- Cook the Quesadillas: Heat a skillet, place a tortilla, sprinkle cheese on half, add buffalo chicken, more cheese, fold, cook 2β3 minutes per side until golden brown and cheese melts. Repeat for remaining tortillas.
- Serve: Slice into wedges, garnish with green onions or cilantro, and serve warm.
