Rigatoni Pasta:

  • 12 ounces rigatoni pasta

Chicken:

  • 2 tablespoons olive oil
  • 1 ½ pounds boneless skinless chicken breasts (cut into bite-sized pieces)
  • Salt and black pepper to taste

Sauce:

  • 4 cloves garlic (minced)
  • 3 cups cherry tomatoes
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese

  • 2 tablespoons butter

Instructions

  1. Cook the Rigatoni: Boil salted water, cook pasta until al dente, reserve ½ cup pasta water.
  2. Cook the Chicken: Season chicken, cook until golden, set aside.
  3. Make the Sauce: Sauté garlic, add tomatoes and pepper, cook until tomatoes burst. Add broth, simmer. Return chicken, add pasta, butter, cheese. Toss.
