Rigatoni Pasta:
- 12 ounces rigatoni pasta
Chicken:
- 2 tablespoons olive oil
- 1 ½ pounds boneless skinless chicken breasts (cut into bite-sized pieces)
- Salt and black pepper to taste
Sauce:
- 4 cloves garlic (minced)
- 3 cups cherry tomatoes
- ¼ teaspoon crushed red pepper flakes (optional)
- ½ cup chicken broth
- ½ cup grated Parmesan cheese

- 2 tablespoons butter
Instructions
- Cook the Rigatoni: Boil salted water, cook pasta until al dente, reserve ½ cup pasta water.
- Cook the Chicken: Season chicken, cook until golden, set aside.
- Make the Sauce: Sauté garlic, add tomatoes and pepper, cook until tomatoes burst. Add broth, simmer. Return chicken, add pasta, butter, cheese. Toss.
- Finish and Serve: Stir in basil, adjust seasoning, serve warm with extra cheese.
