This tangy favorite is sure to please and comes out juicy and flavorful every time. The homemade Cajun spice provides a punch and the addition of pineapple makes your meal juicy and refreshing.
California Cajun Chicken

Ingredients:
- 2 lbs. (3-4 large) chicken breasts, boneless skinless 1 tbsp oil
- 1 tsp ground black pepper 2 tsp garlic powder
- 2- 2 1/2 tsp paprika 1 tsp onion powder 1 tsp oregano
- 1 tsp thyme
- 1 tsp cayenne pepper 1 tsp salt
- 1/2 tsp red pepper flakes
- 1 can of diced pineapple or 1-2 cups fresh pineapple
Instructions:
Cut 2lbs of Chicken Breast lengthwise into cutlets and set aside in a large bowl.
In a smaller bowl mix together paprika, oregano, onion powder, garlic powder, thyme, cayenne pepper, black pepper, salt, and red pepper flakes. Stir to combine.
Sprinkle 1-2 tbsp of the powder mixture over the cut chicken and toss to coat. Add a small amount of oil to the mixture and toss.
Pre-heat a non-stick skillet and coat with oil.
Place the chicken piece into the pan and cook for approximately 5 minutes or until lightly browned.
Reduce heat to low. Add in the rest of the mixture and stir thoroughly.
Add in 1 can of diced pineapple that has been drained (or 1-2 cups of fresh pineapple) and allow the mixture to simmer over low heat for 5 minutes.
Serve over rice or your favorite pasta
*Note You can also bake this recipe at 450 F for 25-30 minutes.
