Description

Caprese Salad Bites with Balsamic Reduction are a delightful and elegant appetizer featuring juicy cherry tomatoes, creamy fresh mozzarella, and aromatic basil leaves skewered together and drizzled with a sweet and tangy balsamic reduction. This recipe is perfect for summer gatherings or light snacks, offering fresh Italian flavors in easy-to-eat bite-sized portions.

Ingredients

Scale

Salad Bites

  • 1 pint cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (ciliegine), drained
  • 1 bunch fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Balsamic Reduction

  • 1 cup balsamic vinegar
  • 1 tablespoon honey (optional)

Assembly

  • Toothpicks or small skewers for assembling

Instructions

  1. Prepare the Balsamic Reduction: In a small saucepan over medium heat, combine the balsamic vinegar and honey if using. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10 to 15 minutes. Stir occasionally until the vinegar reduces by half and achieves a syrupy consistency. Remove from heat and allow it to cool completely.
  2. Assemble the Caprese Bites: While the balsamic reduction cools, thread one tomato half, one fresh basil leaf, and one mozzarella ball onto each toothpick or small skewer. Arrange the assembled bites neatly on a serving platter.
  3. Season and Finish: Drizzle the assembled bites with extra virgin olive oil and season with salt and freshly ground black pepper to taste. Just before serving, drizzle the cooled balsamic reduction evenly over the bites to add a sweet and tangy finish.

Notes

  • For the best flavor, choose ripe, sweet tomatoes and high-quality balsamic vinegar.
  • The balsamic reduction can be prepared in advance and stored in an airtight container in the refrigerator for up to one week.
  • Adjust the sweetness of the reduction by varying the amount of honey or omitting it altogether for a more traditional tangy taste.
  • This appetizer is best served fresh for optimal texture and flavor.
