For the carrot cake layer:
- 1 cup finely grated carrots
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup vegetable oil
- 1 egg
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon ground cinnamon

For the cheesecake layer:
- 8 oz cream cheese (softened)
- ¼ cup granulated sugar
- 1 egg
- ½ teaspoon vanilla extract
For topping (optional):
- powdered sugar
- crushed nuts
- a drizzle of cream cheese glaze
Instructions
- Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk the egg, brown sugar, oil, vanilla, and grated carrots. Combine the wet and dry ingredients, then fold in chopped nuts if using.
- In a separate bowl, beat the cream cheese until smooth. Add the sugar, egg, and vanilla extract and beat until creamy and well combined.
- Spoon about 1 tablespoon of carrot cake batter into each mini muffin cup, followed by 1 tablespoon of cheesecake batter on top.
- Bake for 18–22 minutes, or until the centers are set and a toothpick comes out clean. Let cool completely, then chill in the refrigerator for at least 1 hour before serving. Top with a dusting of powdered sugar, nuts, or glaze if desired.
