Chicken:

  • 1 tablespoon sesame oil

Stir-Fry:

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ cup unsalted roasted cashews
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  1. Prepare Chicken: Toss chicken pieces with cornstarch, salt, and pepper.
  2. Mix Sauce: Whisk together soy sauce, oyster sauce, hoisin sauce, rice vinegar, and sesame oil.
  3. Cook Chicken: Cook chicken in vegetable oil until golden. Set aside.
  4. Sauté Vegetables: Sauté garlic, ginger, and bell peppers until tender.
  5. Combine: Return chicken to skillet, add sauce, and cook until thickened.
