Description

Cauliflower Mashed Potatoes is a healthy, low-carb alternative to traditional mashed potatoes, made creamy and flavorful with butter, garlic, Parmesan, and cream cheese. This easy side dish is perfect for a comforting meal and suitable for vegetarian and gluten-free diets.

Ingredients

Scale

Main Ingredients

  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons cream cheese
  • 1/4 cup whole milk (or as needed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish

  • Chopped fresh chives (optional)

Instructions

  1. Boil Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10–12 minutes, or until very tender.
  2. Drain and Dry: Drain the cauliflower well and let it sit for a few minutes to release excess moisture, ensuring a creamy mashed texture.
  3. Blend Ingredients: In a large food processor or using an immersion blender, combine the cooked cauliflower, butter, minced garlic, grated Parmesan, cream cheese, milk, salt, and black pepper. Blend until smooth and creamy, scraping down the sides as needed.
  4. Adjust Seasoning and Texture: Taste and adjust seasoning with additional salt or pepper if needed; add more milk to reach your desired creaminess.
  5. Serve and Garnish: Transfer the mashed cauliflower to a serving bowl, garnish with chopped fresh chives if desired, and serve warm.

Notes

  • For a dairy-free version, use olive oil instead of butter and omit the cheese or substitute with dairy-free alternatives.
  • To achieve a chunkier texture, mash the cauliflower by hand instead of blending.
