Description

These delicious Cheeseburger Pockets combine the savory flavors of classic cheeseburgers with the convenience of a handheld pastry. Filled with seasoned ground beef, melted cheddar cheese, and flavorful condiments, then wrapped in buttery biscuit dough and baked to golden perfection, these pockets make a perfect kid-friendly dinner or snack.

Ingredients

Scale

Meat Filling

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 cup shredded cheddar cheese

Dough & Topping

  • 1 can (16 ounces) refrigerated biscuit dough (8 biscuits)
  • 1 tablespoon melted butter
  • Sesame seeds for topping (optional)

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the pockets.
  2. Cook the beef mixture: In a medium skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is softened, about 6 to 8 minutes. Drain off any excess fat.
  3. Add seasonings and condiments: Stir in salt, black pepper, ketchup, and yellow mustard into the beef mixture until well combined. Remove from heat and allow to cool slightly.
  4. Mix in cheese: Once the beef mixture is warm but not hot, stir in the shredded cheddar cheese so it begins to melt slightly and distribute evenly.
  5. Prepare dough rounds: Flatten each biscuit dough round into a 5-inch circle on a clean surface, creating a base for the filling.
  6. Assemble pockets: Spoon about 2 tablespoons of the beef and cheese filling onto the center of each dough circle. Fold the dough over the filling to form a half-moon shape and pinch the edges tightly to seal completely.
  7. Prepare for baking: Place the sealed pockets on a baking sheet lined with parchment paper. Brush the tops with melted butter and sprinkle sesame seeds on top if desired for added flavor and texture.
  8. Bake: Bake in the preheated oven for 12 to 15 minutes or until the biscuit dough is golden brown and cooked through.
  9. Cool and serve: Let the pockets cool slightly on a wire rack before serving to avoid burning and to help the cheese set a bit inside.

Notes

  • Substitute biscuit dough with pizza dough or puff pastry for different textures.
  • Add pickles or chopped bacon to the filling for extra flavor and crunch.
  • These pockets reheat well, making them ideal for meal prep or packed lunches.
