Description

This Cheesy Potato Casserole is a comforting and easy-to-make side dish perfect for family dinners and potlucks. Featuring tender shredded hash browns baked with sharp cheddar cheese, creamy sour cream, and a crunchy buttery cornflake topping, this classic American dish is both flavorful and satisfying.

Ingredients

Scale

Main Ingredients

  • 1 (30 oz) bag frozen shredded hash browns (thawed)
  • 2 cups shredded sharp cheddar cheese
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup unsalted butter (melted)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping

  • 1 1/2 cups crushed cornflakes or buttery crackers
  • 2 tablespoons melted butter

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Mix the casserole base: In a large bowl, combine the thawed shredded hash browns, shredded sharp cheddar cheese, cream of chicken soup, sour cream, melted butter, garlic powder, onion powder, salt, and black pepper. Stir well to ensure all ingredients are evenly incorporated.
  3. Spread mixture: Evenly spread the potato mixture into the prepared baking dish, smoothing the surface with a spatula.
  4. Prepare and add topping: In a small bowl, mix the crushed cornflakes or buttery crackers with the 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the potato mixture in the dish.
  5. Bake: Place the casserole in the oven and bake for 45–50 minutes, or until it is hot, bubbly, and the topping turns a golden brown color.
  6. Rest before serving: Remove from the oven and let the casserole rest for 5–10 minutes to set before serving. Enjoy warm.

Notes

  • Make it ahead by assembling the casserole (without topping) and refrigerate for up to 24 hours before baking to save time on the day of serving.
  • For a meatier version, add diced ham or cooked bacon to the potato mixture before baking.
  • Use gluten-free cornflakes or crackers to adapt the recipe for gluten-free diets.
  • The casserole freezes well; prepare completely, then freeze before baking. Thaw overnight before baking as directed.
