Description

A delicious and easy recipe for Cheesy Ranch Potatoes and Smoked Sausage featuring tender roasted baby potatoes and flavorful smoked sausage, all coated in ranch seasoning and topped with melted cheddar cheese. Perfect for a comforting weeknight meal or casual gathering.

Ingredients

Scale

Potatoes and Sausage

  • 1 pound baby potatoes (or 4-5 medium potatoes, cut into bite-sized pieces)
  • 14 oz smoked sausage, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil

Seasonings and Toppings

  • 1 packet ranch seasoning mix (or homemade ranch seasoning)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional, for extra flavor)
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional, for extra creaminess)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
  2. Prepare the Potatoes and Sausage: Wash the baby potatoes thoroughly and cut them into bite-sized pieces. Slice the smoked sausage into 1/4-inch rounds for even cooking.
  3. Season the Potatoes and Sausage: In a large bowl, combine the potatoes and sausage slices. Add olive oil, ranch seasoning mix, garlic powder, paprika if using, salt, and pepper. Toss everything well until all pieces are evenly coated with the seasoning and oil.
  4. Bake: Spread the seasoned potato and sausage mixture evenly on the prepared baking sheet. Place it in the preheated oven and roast for about 25-30 minutes. Check for tenderness of the potatoes and a golden brown color on both potatoes and sausage.
  5. Add the Cheese: Remove the baking sheet from the oven and generously sprinkle the shredded cheddar cheese over the potatoes and sausage. Return the sheet to the oven and bake for an additional 5-7 minutes, or until the cheese has melted completely and is bubbly and golden.
  6. Serve: Once the cheese is melted and golden, remove from the oven. Garnish with freshly chopped parsley if desired. For extra creaminess, drizzle sour cream over the top before serving. Serve hot and enjoy!

Notes

  • You can substitute baby potatoes with medium potatoes cut into bite-sized pieces for a similar result.
  • The paprika is optional but adds a nice depth of smoky flavor.
  • For a homemade ranch seasoning, mix dried herbs like dill, parsley, garlic powder, onion powder, salt, and pepper.
  • Sour cream is optional but adds a creamy richness once served.
  • Leftovers can be refrigerated and reheated gently in the oven or microwave.
  • Adjust salt and pepper according to your taste preference.
