These Chewy French Toast Cookies feature a delightful blend of warm spices and sweet maple and vanilla flavors, delivering a soft and chewy texture reminiscent of classic French toast. Perfect for breakfast or a sweet treat any time of the day.

Ingredients

Scale

Wet Ingredients

  • ½ cup (115g) unsalted butter, softened
  • â…“ cup (67g) granulated sugar
  • ½ cup (100g) light brown sugar
  • 1 large egg yolk
  • ½ cup (120ml) light corn syrup
  • 2 teaspoons (10ml) pure vanilla extract
  • 2 teaspoons (10ml) maple extract (or 1 tablespoon pure maple syrup)

Dry Ingredients

  • 2â…“ cups (292g) all-purpose flour
  • 1 teaspoon (5g) ground cinnamon
  • ½ teaspoon (2.5g) ground nutmeg
  • 1 teaspoon (5g) baking soda
  • ¼ teaspoon (1.25g) salt

For Rolling

  • ¼ cup (50g) granulated sugar

Instructions

  1. Preheat Oven: Set the oven to 350°F (177°C) and line two baking sheets with parchment paper or silicone baking mats to prepare for baking.
  2. Cream Butter and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and light brown sugar until the mixture is light, fluffy, and well combined.
  3. Mix Wet Ingredients: Add the egg yolk, light corn syrup, pure vanilla extract, and maple extract (or pure maple syrup) to the creamed mixture. Mix thoroughly until all wet ingredients are fully incorporated.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground cinnamon, ground nutmeg, baking soda, and salt, ensuring they are evenly mixed.
  5. Form Dough: Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until a smooth, cohesive dough forms.
  6. Roll in Sugar: Scoop dough balls approximately 1.5 inches (3.8 cm) in diameter, then roll each ball in the ¼ cup granulated sugar to coat evenly.
  7. Bake: Arrange the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches (5 cm) apart to allow for spreading. Bake in the preheated oven for 10-12 minutes, just until the cookies are set but remain soft in the center.
  8. Cool & Serve: Remove the cookies from the oven and let them cool on the baking sheets for 2 minutes. Then transfer them to a wire rack to cool completely before serving.

Notes

  • For a stronger maple flavor, use pure maple syrup instead of maple extract.
  • Be careful not to overbake the cookies to maintain their chewy texture.
  • These cookies can be stored in an airtight container at room temperature for up to 5 days.
  • If you prefer a spicier flavor, increase the cinnamon and nutmeg slightly.
