Description
A hearty and comforting Chicken & Dumplings recipe made with tender chicken breast simmered in flavorful chicken broth with vegetables, topped with soft, fluffy dumplings prepared in just five simple steps.
Ingredients
Scale
For the Soup:
- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
For the Dumplings:
- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup butter, melted
Instructions
- Combine Soup Ingredients: In a large pot, combine the diced chicken breast, chicken broth, chopped carrots, chopped celery, and diced onion. Bring the mixture to a boil over medium-high heat.
- Simmer Chicken: Once boiling, reduce the heat to low and let it simmer gently for 20 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Prepare Dumpling Mix: In a mixing bowl, combine the flour, baking powder, and salt. Stir these dry ingredients together to evenly distribute the baking powder and salt.
- Add Wet Ingredients: Pour in the milk and melted butter to the dry mixture, stirring just until combined. Avoid overmixing to keep dumplings light and fluffy.
- Cook Dumplings: Drop spoonfuls of the dumpling batter carefully onto the surface of the simmering broth. Cover the pot tightly and let the dumplings cook for 15 minutes without lifting the lid, until they are puffed up and cooked through.
- Serve: Once dumplings are tender and cooked, ladle the chicken, vegetables, broth, and dumplings into bowls and serve hot for a comforting meal.
Notes
- Use fresh vegetables for the best flavor, or frozen can be used in a pinch.
- Do not lift the lid while dumplings are cooking to ensure they puff properly.
- If you prefer thicker broth, you can add a slurry of cornstarch and water before adding dumplings.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove.
- For a richer flavor, you can brown the chicken briefly before adding broth.
