  • 3/4 cup uncooked stelline or star pasta
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the Olive Oil: In a large pot, heat olive oil over medium heat.
  2. Sauté Vegetables: Add diced onion, carrots, and celery, sauté for about 5 minutes until softened. Stir in minced garlic and cook for another 30 seconds.
  3. Add Broth and Pasta: Pour in chicken broth, bring to a boil. Add thyme, parsley, and star pasta. Simmer for 8 minutes until pasta is tender.
  4. Finish Soup: Stir in shredded chicken, simmer for 2–3 minutes. Season with salt, pepper, and lemon juice. Garnish with parsley.
