Instructions
- Prepare the Chicken Patties: In a large bowl, combine ground chicken, breadcrumbs, egg, red onion, garlic, chili powder, cumin, salt, and pepper. Mix until just combined to keep the patties tender, then form the mixture into 4 equal-sized patties.
- Cook the Patties: Heat a skillet or grill over medium heat and lightly oil the surface. Cook the chicken patties for about 5–6 minutes per side, or until they reach an internal temperature of 165°F and are golden brown on the outside.
- Make the Avocado Corn Salsa: While the patties cook, gently toss together the diced avocado, corn, quartered cherry tomatoes, finely chopped red onion, fresh lime juice, chopped cilantro, salt, and pepper in a medium bowl. Be careful not to mash the avocado.
- Toast the Buns and Assemble: If desired, toast the burger buns until lightly crisp. To assemble each burger, place a layer of lettuce or arugula on the bottom bun, add a cooked chicken patty, spoon a generous amount of avocado corn salsa on top, and finish with the top bun. Add mayonnaise or chipotle mayo if you like. Serve immediately for the best flavor and texture.
