Salad Filling
- 2 cups cooked chicken breast (shredded or chopped)
- 2 cups chopped romaine lettuce
- â…“ cup Caesar dressing
- ¼ cup grated Parmesan cheese
- 1 tablespoon lemon juice
- ½ teaspoon black pepper
Tortilla Cones
- 4 large flour tortillas
- 1 tablespoon olive oil
- ¼ cup Caesar croutons (crushed slightly)
- Optional: cherry tomatoes (halved) for garnish
Instructions
- Preheat and prepare tortillas: Preheat the oven to 375°F. Lightly brush each flour tortilla with olive oil, then shape them into cone forms using foil or an oven-safe mold to maintain their shape during baking.
- Bake tortilla cones: Place the tortilla cones on a baking sheet with the seam side facing down. Bake for 10 to 12 minutes or until the cones turn golden brown and crisp. Allow them to cool completely before carefully removing the foil molds.
- Prepare the Caesar salad filling: In a large bowl, gently combine the cooked chicken, chopped romaine lettuce, Caesar dressing, lemon juice, black pepper, and half of the grated Parmesan cheese. Mix until well coated but maintain the salad’s texture.
- Assemble the cones: Spoon the Caesar salad mixture evenly into the cooled tortilla cones. Sprinkle the top of each cone with the remaining Parmesan cheese and crushed Caesar croutons for added crunch.
- Garnish and serve: Optionally, garnish each cone with halved cherry tomatoes. Serve immediately to enjoy the crispness of the cones combined with the fresh salad filling.
Notes
- Use store-bought rotisserie chicken to save preparation time.
- For a variation, substitute grilled shrimp or tofu in place of chicken.
- You can make the tortilla cones ahead of time and store them in an airtight container for up to 2 days to maintain crispness.
