Description

This Chicken Fajita Casserole combines all the flavors of classic fajitas in an easy-to-make, cheesy baked dish. Perfect for a weeknight dinner or a casual gathering, this casserole is a crowd-pleaser.

Chicken:

  • 1 1/2 lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp olive oil

Vegetables:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 medium onion (sliced)

Seasonings:

  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cheese Mixture:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 4 oz cream cheese (softened)
  • 1/4 cup chicken broth

Garnish:

  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook until lightly browned, about 4–5 minutes (they do not need to be fully cooked through). Remove chicken from skillet and set aside.
  2. In the same skillet, add bell peppers and onion. Sauté for 5–6 minutes until softened. Stir in chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper; cook for 1 minute to toast the spices.
  3. In a large mixing bowl, combine sour cream, cream cheese, and chicken broth until smooth. Add chicken, peppers, and onions to the mixture and stir to coat evenly.
  4. Transfer to a greased 9×13-inch baking dish, top with cheddar and Monterey Jack cheeses, and bake for 20–25 minutes until hot and bubbly.
  5. Garnish with fresh cilantro before serving.

Notes

  • This casserole is delicious served over rice, with warm tortillas, or on its own for a low-carb option.
