Chicken Salad:
- 2 cups cooked chicken breast (finely chopped or shredded)

- 1 tablespoon lemon juice

- 1 tablespoon chopped fresh parsley

Assembly:
- 12 slices soft white or wheat sandwich bread

Instructions
- In a medium bowl, prepare the chicken salad: Combine chopped chicken, mayonnaise, mustard, lemon juice, celery, red onion, parsley, garlic powder, salt, and pepper. Mix until creamy.
- Assemble the sandwiches: Trim bread crusts if desired. Optionally butter one side of each slice. Spread chicken salad on half the slices and top with the remaining slices. Cut into smaller pieces.
- Serve: Arrange sandwiches on a platter. Serve chilled or at room temperature.
