This hearty Chili Rice Skillet Meal combines seasoned ground beef, chili beans, diced tomatoes, and rice cooked together in one pan for a comforting and flavorful dish. Topped with melted cheddar cheese and customizable with toppings like jalapeños and sour cream, it’s perfect for a satisfying weeknight dinner ready in just 30 minutes.

Ingredients

Scale

Main Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • 1 (15.5 oz) can chili beans, undrained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 ½ cups beef broth
  • 1 (8 oz) can tomato sauce
  • 1 cup long-grain white rice, rinsed
  • 1 ½ cups shredded cheddar cheese

Optional Toppings

  • Jalapeños
  • Sour cream
  • Hot sauce

Instructions

  1. Brown Beef and Season: In a large skillet over medium-high heat, brown the ground beef along with the chopped onion. Season the mixture with salt, black pepper, paprika, chili powder, onion powder, and ground cumin. Cook until the beef is thoroughly browned and onions are softened. Drain any excess grease from the skillet.
  2. Add Remaining Ingredients: Stir in the minced garlic, undrained diced tomatoes, chili beans, beef broth, tomato sauce, and rinsed long-grain white rice. Mix well to combine all ingredients evenly.
  3. Simmer: Bring the mixture to a boil, then reduce the heat to medium-low. Cover the skillet with a lid and let it simmer for about 20 minutes or until the rice is fully cooked and has absorbed most of the liquid.
  4. Melt Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the skillet. You can place the skillet in a preheated oven at 350°F (175°C) for a few minutes until the cheese melts, or simply cover the skillet and let it sit on the stovetop until the cheese is melted through.
  5. Serve: Serve the chili rice hot, garnished with your favorite optional toppings such as sliced jalapeños, sour cream, and hot sauce for an extra kick of flavor.

Notes

  • Make sure to rinse the rice before cooking to remove excess starch and prevent sticking.
  • For a spicier dish, add more chili powder or chopped fresh chilies.
  • Use lean ground beef to reduce fat content or substitute with ground turkey for a lighter option.
  • If you don’t have an oven, covering the skillet and letting the cheese melt on low heat works well.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
