Ingredients
Scale
Dates and Filling
- 12 Medjool dates (pitted)
- 1/4 cup natural almond butter or peanut butter
- 1/4 cup chopped roasted almonds or pistachios
- 1/2 teaspoon sea salt flakes
Chocolate Coating
- 6 ounces dark chocolate (chopped or chips)
- 1 teaspoon coconut oil (optional, for smoother coating)
Instructions
- Prepare the Dates: Slice each Medjool date lengthwise on one side and remove the pit if not already done. Gently open the dates just enough to create a pocket for filling.
- Stuff the Dates: Spoon about 1 teaspoon of natural almond butter into each date. Press a few pieces of chopped roasted almonds or pistachios into the filling, then close the dates gently to hold the filling securely inside.
- Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate and coconut oil if using. Microwave in 30-second intervals, stirring between each session until the chocolate is completely smooth and melted.
- Coat the Dates: Using a fork, dip each stuffed date into the melted chocolate, allowing any excess chocolate to drip off to avoid a thick coating.
- Set the Chocolate: Place the chocolate-coated dates on a tray lined with parchment paper. While the chocolate is still wet, sprinkle sea salt flakes over each date to add flavor contrast.
- Chill: Refrigerate the tray for 20–30 minutes or until the chocolate coating is fully set and firm to the touch.
Notes
- Experiment with different nut butters such as tahini or cashew butter for varied flavors.
- Try inserting a whole toasted almond inside each date along with the almond butter for extra crunch.
- Store finished chocolate covered dates in an airtight container in the refrigerator for up to one week.
