Instructions

  1. Prepare the Dates: Slice each Medjool date lengthwise on one side and remove the pit if not already done. Gently open the dates just enough to create a pocket for filling.
  2. Stuff the Dates: Spoon about 1 teaspoon of natural almond butter into each date. Press a few pieces of chopped roasted almonds or pistachios into the filling, then close the dates gently to hold the filling securely inside.
  3. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate and coconut oil if using. Microwave in 30-second intervals, stirring between each session until the chocolate is completely smooth and melted.
  4. Coat the Dates: Using a fork, dip each stuffed date into the melted chocolate, allowing any excess chocolate to drip off to avoid a thick coating.
