Description

These Chocolate-Dipped Easter Rice Krispie Treats combine the classic marshmallow and cereal base with a festive chocolate coating, creating a fun and delicious treat perfect for Easter celebrations. The treats are easy to make, featuring a gooey, crunchy texture dipped in rich dark and white chocolate, finished with colorful sprinkles for an extra festive touch.

Ingredients

Scale

Main Ingredients

  • 8 tablespoons butter
  • 16 cups mini marshmallows (divided)
  • 10 cups Rice Krispies cereal
  • ½ teaspoon salt

Chocolate Coating

  • 6 ounces high-quality dark chocolate
  • 6 ounces high-quality white chocolate

Optional

  • Sprinkles (optional)

Instructions

  1. Prepare the pan: Line a 9×13-inch pan with foil and lightly grease it with cooking spray to prevent sticking and ensure easy removal of the treats.
  2. Melt butter and marshmallows: In a large pot over low heat, melt the butter gently. Add 12 cups of mini marshmallows and stir continuously until fully melted and combined into a smooth mixture.
  3. Combine cereal and marshmallow mixture: Remove the pot from heat. Stir in ½ teaspoon of salt and the 10 cups of Rice Krispies cereal until everything is evenly coated. Then add the remaining 4 cups of marshmallows and mix thoroughly until well combined.
  4. Press mixture into pan: Transfer the marshmallow-cereal mixture to the prepared pan. Using parchment paper sprayed with non-stick spray, press the mixture evenly and firmly into the pan. Allow it to cool completely at room temperature to set.
  5. Cut into squares: Once the mixture is fully cooled and firm, remove it from the pan and cut into 20 to 24 squares for individual treats.
  6. Melt chocolates using double boilers: Set up a double boiler by bringing 1 inch of water to a simmer in two separate pots. Place a heat-safe bowl on top of each pot and melt the dark chocolate in one bowl and the white chocolate in the other, stirring until both are smooth and silky.
  7. Dip treats in chocolate: Holding each Rice Krispie square by a popsicle stick inserted at this stage, dip halfway into either the melted dark or white chocolate. Let any excess chocolate drip off before placing the treat on parchment paper.
  8. Add sprinkles and set: While the chocolate is still wet, sprinkle festive decorations over the dipped area if desired. Allow the chocolate coating to set completely at room temperature before serving or storing.

Notes

  • Use high-quality chocolate for best flavor and smooth coating.
  • Press the mixture firmly into the pan to ensure treats hold together well when cut.
  • Sprinkles are optional but add extra festive flair for Easter.
  • For quicker chocolate setting, place dipped treats in the refrigerator for 15-20 minutes.
  • Store treats in an airtight container at room temperature to keep them fresh for up to 3 days.
