Instructions
- Melt Chocolate and Butter: Place the chopped chocolate and butter in a heatproof bowl set over a pot of gently simmering water. Stir continuously until the mixture is smooth and fully melted. Remove from heat and allow to cool slightly to avoid cooking the egg yolks in the next step.
- Whisk Egg Yolks and Sugar: In a separate bowl, whisk the egg yolks with 2 tablespoons of granulated sugar until the mixture is pale in color and slightly thickened, indicating it’s well aerated.
