Ingredients
Scale
Dough
- 4 tbsp all-purpose flour
- ¼ tsp baking powder
- Pinch of fine sea salt
- 1½ tbsp water
Filling
- 1 tbsp brown sugar or coconut sugar
- ½ tsp ground cinnamon
Icing
- 2 tbsp powdered sugar
- ½ tsp plant-based milk or water
Other
- A tiny dab of oil for greasing the mug
Instructions
- Prepare the Icing: In a small bowl, combine powdered sugar with plant-based milk or water. Stir until you achieve a smooth and drippy consistency. Set aside.
- Grease the Mug: Lightly grease an 11–12 oz microwave-safe mug with a tiny dab of oil to prevent sticking.
- Make the Dough: In a separate bowl, mix together all-purpose flour, baking powder, and a pinch of salt. Gradually add water while stirring until a slightly tacky dough forms. Knead the dough gently a few times.
- Roll It Out: Lightly flour a clean surface and roll the dough into a 4-inch wide strip approximately ⅛ inch thick.
- Add Filling: Evenly sprinkle the brown or coconut sugar and ground cinnamon over the rolled-out dough. Fold the edges inward carefully, sealing the cinnamon sugar inside the dough strip.
- Shape & Microwave: Roll the dough strip into a spiral shape and place it inside the greased mug. Pour ½ teaspoon of water on top to help create steam during cooking. Microwave on full power for about 50 seconds; adjust time as necessary depending on your microwave’s wattage.
- Serve: Carefully turn the cooked cinnamon roll out onto a plate. Drizzle the prepared icing over the warm cinnamon roll and enjoy immediately while fresh and warm.
Notes
- Use a microwave-safe mug between 11 and 12 ounces to give enough space for the roll to expand.
- Cooking time may vary depending on your microwave’s power; start checking at 45 seconds to avoid overcooking.
- You can substitute coconut sugar with brown sugar or your preferred sweetener.
- Adjust icing consistency by adding more or less plant-based milk or water to reach your desired thickness.
- Serve immediately as the texture is best fresh out of the microwave.
