  • 2 tbsp salted butter, at room temperature
  • 2 tbsp fireweed honey or other mild honey
  • ¼ tsp hot chili flakes (optional, adjust to taste)


Instructions

  1. Make the Hot Honey Butter: In a small bowl, combine softened salted butter, fireweed honey, and optional hot chili flakes until the mixture is smooth and well blended. Set aside for later use.
  2. Assemble Sandwiches: Spread 3 tablespoons of regular butter evenly on one side of each bread slice. On the unbuttered sides of four slices, layer slices of brie cheese followed by thin slices of apple. Top each with the remaining bread slices, ensuring the buttered side is facing outward.
  3. Cook the Sandwiches: Heat a non-stick skillet or griddle over medium-low heat. Place each sandwich in the skillet and cook for 3 to 5 minutes on each side, pressing gently to ensure even browning and melting. Flip when the bread is golden brown and repeat on the other side until the brie is melted and the bread is crisp.
  4. Finish with Hot Honey Butter: While the sandwiches are still warm, either spread or drizzle the prepared hot honey butter over the top of each sandwich to add a sweet and spicy finishing touch. Serve immediately for best flavor and texture.
