Coconut lime curry chicken

Coconut lime curry chicken🍗🥥🫑 Essentially a one pot wonder and so many options for cooking: pressure cook, oven bake or sear+pan fry like I did in the video ⬆️ most important part is that you let this marinate to get all those delicious flavours to come through 👩🏻‍🍳

INGREDIENTS:

  • Recipe for marinade:
  • 1 can coconut milk
  • 3 tbsp cilantro
  • 1-2 jalapeños
  • Juice of 1 lime
  • 1.5 tsp garlic minced
  • 1 tsp ginger minced
  • 1/2 tsp curry powder
  • 1/2 tsp chili flakes
  • Salt to taste.

Add 1.5 lbs chicken to the marinade and let marinate for up to 8 hours.

Remove chicken from fridge and bring to room temperature (approx 30-45 mins).

Sear chicken on each side for 3-4 mins till browned on both sides.

Once browned, pour left over marinade to the chicken, bring to a boil cover and simmer on medium low heat for 20 mins.

Turn off the heat and meet covered 5 mins.

Serve with jasmine rice and veggies of choice, making sure to drizzle the cooked coconut sauce over the dish.

Garnish with a squeeze of lime juice and enjoy
