For the Cookies:
- 1/2 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1/4 cup brown sugar (packed)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips (melted)
- 1/2 cup mini chocolate chips
- 1/2 cup rainbow candy-coated chocolate chips or rainbow sprinkles
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, then stir in the vanilla.
- Mix dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add to wet mixture.
- Combine chocolate chips: Fold in melted chocolate chips, then stir in mini chocolate chips.
- Bake: Scoop dough onto baking sheets and bake for 9–11 minutes until edges are set. Press rainbow chips/sprinkles on top. Cool and enjoy!
