Ingredients
Scale
Vegetables
- 6 Roma tomatoes, diced
- 1 bell pepper (any color), seeded and diced
- 1 medium onion, finely diced
- 2 jalapeño peppers, seeded and finely diced
- 1 large avocado, peeled, pitted, and diced
- 4 medium garlic cloves, pressed
- 1/2 bunch of cilantro, chopped (about 1/2 cup)
Canned Goods
- 15 oz can of corn, drained (or from 1 cooked cob)
- 15 oz can of black beans, well rinsed and drained
Dressing
- 3–4 tablespoons lime juice
- 1/2 cup light Italian dressing
- 1 teaspoon sea salt, or to taste
Instructions
- Combine Vegetables and Beans: In a large mixing bowl, add the diced Roma tomatoes, bell pepper, onion, jalapeños, avocado, drained corn, black beans, and chopped cilantro. Ensure all ingredients are evenly distributed.
- Add Dressing and Seasoning: Pour in the lime juice and light Italian dressing. Add the pressed garlic cloves and sea salt. Mix everything thoroughly until all components are well coated with the dressing and seasoning.
- Let Flavors Meld: Cover the bowl and let the Cowboy Caviar sit for at least 30 minutes at room temperature. This resting time allows the flavors to fully develop and blend.
- Serve: Serve the Cowboy Caviar as a refreshing dip with tortilla chips or as a flavorful side dish to complement your favorite meals.
Notes
- For a spicier dip, keep the jalapeño seeds or add more jalapeños.
- Use fresh corn on the cob instead of canned for a sweeter flavor.
- Adjust salt to taste especially if using store-bought dressing which may contain sodium.
- This recipe is best served fresh but can be refrigerated for up to 2 days.
- If preparing ahead, add avocado just before serving to prevent browning.
